About MAZ

MAZ is a culinary treasure nestled in the vibrant heart of Tokyo. This two Michelin-starred restaurant is the creation of the acclaimed Peruvian chef Virgilio Martínez, who is also behind the famous Central Restaurante in Lima. MAZ is part of Martínez’s Mater Iniciativa, an organization dedicated to celebrating food diversity across borders. The restaurant embodies the philosophy of “”Afuera hay mas”” (There is more outside), showcasing the rich ecosystems and cultural heritage of Peru right in Tokyo.

The Experience

Walking into MAZ, guests are welcomed by a chic, earthy dining space adorned with impressive floor-to-ceiling windows. The atmosphere strikes a perfect balance between elegance and warmth, setting the stage for an extraordinary culinary adventure. Each themed menu at MAZ takes diners on a vertical journey through Peru’s diverse landscapes, from the majestic Andes to the stunning Pacific coast. The Vertical World courses are crafted to mirror the unique terrains found at different altitudes in Peru, making every dish a celebration of the country’s incredible biodiversity.

The Menu

At MAZ, diners can indulge in a meticulously curated nine-course tasting menu. Interestingly, only 20% of the ingredients are imported from Peru, while the remaining 80% are sourced from specialized growers and producers in Tokyo. This thoughtful combination of local and international ingredients results in dishes that are both authentic and innovative. Some standout items on the menu include cacao, biodynamic coffee, dehydrated potatoes, and edible chaco clay, all artfully combined to create a one-of-a-kind gastronomic experience.

The wine selection at MAZ highlights small, natural producers from South America, providing a range of options to perfectly complement the meal. For those who prefer non-alcoholic beverages, there are plenty of delightful alternatives like nectar and infusions. The alcohol pairing option features a variety of wines and other drinks from around the globe, starting with selections from Peru.

  • Location: MAZ is situated on the 3rd floor of Tokyo Garden Terrace, 1-3 Kioicho, Chiyoda-ku, Tokyo 102-0094.
  • Access: Just a minute’s walk from Exit D of Akasaka-Mitsuke Station on the Tokyo Metro Ginza and Marunouchi Lines, and also accessible from Exit 9a of Tokyo Metro Nagatacho Station.
  • Opening Hours: Open from 5:00 PM to 11:00 PM, closed on Tuesdays.
  • Reservations: Highly recommended due to the restaurant’s popularity. Reservations can be made up to a certain period in advance, with cancellation fees applicable.
  • Payment Methods: MAZ accepts both cash and credit cards (VISA, MASTER, AMEX, JCB, DINERS).
  • Age Restriction: Guests must be at least 12 years old to dine at MAZ.

Tips for Your Visit

  • Arrival Time: Arrive on time for your reservation. If you get there early, seating may not be immediate.
